Jaggery is produced by heating sugarcane juice until all the water has evaporated. Unrefined, and not separated from its molasses, it retains within itself all the trace elements, fibers and other nutrients that sugar loses in the refining process.
Containing less than 50% sucrose, Jaggery is more digestible and less calorific than sugar for the same sweetness.
